Tomatoes hold a special place in my heart. I just love the taste, it’s the perfect hybrid between sweet and tart. I can’t think of anything better than to grab a tomato off a tree and munch on it like an apple!
This simple sweet recipe is an ongoing repeat. You can use any kind of tomatoes, I’m particularly fond of using cherry tomatoes in this recipe.This versatile sauce can be a great accompaniment to pasta, a relish next to scrambled eggs, dip it with bread like a scarpetta, its basically tomato ketchup with some texture. oh, it also goes really well with goat cheese!
All you Need
- some cherry tomatoes
- 1 red onion
- olive oil
- 1 teaspoon of brown sugar
Slice the red onions and roughly chop the cherry tomatoes, you can leave some whole it doesn’t matter! take a medium size frying pan, turn the flame to medium, add some olive oil and a little butter( when you add butter to olive oil you avoid the butter burning, this also makes the recipe creamier) add the red onions to the ,frying pan and with a wooden spoon, mix until wilted, then add brown sugar to caramelise the onions , this should take about three minutes or so, finally add your cherry tomatoes, turn down the heat and cover for ten minutes. sprinkle some salt & pepper, and finally a tiny bit more butter to give it that extra creamy texture.
